Director of Operations
Nathan joined Sustainable Restaurant Group with over 20 years of restaurant operations experience. He is a results driven executive with experience in fine dining, casual, and quick service restaurants. Nathan combines a strong business acumen with the ability to conceive profitable and efficient solutions through the utilization of technological resources and the development of new and effective procedures to maximize results. He is an articulate, industrious troubleshooter dedicated to providing excellence in the business environment while creating a warm and friendly dining experience for guests.
Prior to joining SRG, Nathan was Vice President of Operations for Dinosaur BBQ based in Syracuse, NY and Director of Restaurant Operations for Hagadone Hospitality in Coeur D’Alene, ID. Nathan was able to work in both founder led organizations to implement systems which created operational efficiencies and positioned each company for continued growth. System implementation included actual vs. theoretical food costing programs, cloud based scheduling and labor controls, guest satisfaction measurement tools, master distribution agreements, and multiple vendor contracts. He also worked with other company departments to facilitate new restaurant openings in multiple cities around the US. Before working with Hagadone Hospitality, Nathan was Regional Director of Operations for Restaurants Unlimited based in Seattle, WA.
During his time at RUI Nathan was responsible 9 different brands resulting in over $80 million in revenue and over 500 employees. He oversaw the management and operation of the company’s highest revenue locations while focusing on revenue growth, streamlined operations, reducing operating costs, and greater profitability. During his tenure he was able to increase sales by 6% with regional flow through of over 100% in all locations. Nathan also oversaw the launch of Portland Seafood Company resulting in same store sales increases of over 40%. Over his career Nathan has had the opportunity to work in an owner operator capacity and with founder and private equity led organizations. This gives him a great insight to multiple areas of the business and allows him to work well with all departments to meet the ultimate goal of driving revenue while producing financial results for long term business growth.
